4 slices brioche or thick sandwich bread (slightly stale works best)
2 large eggs
½ cup milk (dairy or plant-based)
1 tsp vanilla extract
½ tsp ground cinnamon (optional)
1 Tbsp butter (for frying)
2 Tbsp maple syrup (for serving)
Fresh blackberries (about ½ cup)
